Need some easy road trip snack ideas this half term? This Welsh Tea Loaf recipe is easy to make and a delicious alongside a hot cuppa on a trip into the countryside. We took ours with us on the Kielder Forest Drive in Northumberland National Park with the Fieldtrip Defender.
Ingredients (Serves 8)
1 mug of sultanas
1 mug of raisins
Handful of chopped mixed peel
1 mug of soft brown sugar
1 mug of strong earl grey tea
1 egg, beaten
1½ mugs of self-raising flour
Baking Instructions
Mix the fruit, peel and sugar in a large mixing bowl. Pour the mug of tea over the mixture and leave to soak for a few hours.
Preheat the oven to 150C/130C fan/gas 2.
Mix the soaked mixture well, fold in the egg, then enough flour to make a soft batter.
Grease and line a 900g loaf tin with baking paper, then pour in the batter and bake for just over 1 hour, until an inserted skewer comes out clean.
Turn out on to a wire rack to cool.
Serve on its own or slathered with butter. Keeps in an airtight container for up to 5 days.
